This afternoon I looked at my basil plant and my stomach said “Margherita Pizza!” Not one to argue with chatty body parts, I made it!
You can use pre-made dough, put it on english muffins, or pitas. I made the dough but used a fast method. Generally I use my breadmaker to make dough, but as I had no planned ahead…
3 cups flour
1.25 tsp active dry yeast
2 tbs extra virgin olive oil
1 tsp salt
1 tsp sucanat (organic cane sugar but regular sugar works too)
1 tsp garlic powder
1 cup warm water (about 80-100 degrees)
3 Roma tomatoes
1/4 fresh basil
2-3 garlic cloves, smooshed
2/3 cups mozzarella cheese
Put yeast and sugar into water and let it bubble for a few minutes.
Add water to the rest of the dough ingredients. You can leave out the garlic powder but it made it so much tastier!
Let dough sit for 5-10 minutes while you prep the other stuff.
Turn dough out on a floured surface and knead 2-4 times, do not over-knead
Oil a pizza sheet. Using your hands, press dough out in a circle or square…whatever. Maybe a parallelogram!
Put pizza in 450 degree oven for ten minutes to pre-cook the crust a bit.
Remove from over and brush the crust with olive oil, and sprinkle the garlic bits about.
Cover with about half of the cheese. Lay the tomatoes over the cheese, sprinkle the basil pieces over that, finish with rest of cheese.
Bake for 15 minutes in the oven at 450.
